What is Fresh Yeast?

Must be stored under 10°C.
You will need established cold chain logistics and transportation to accommodate this.
Does not require activation or hydration, allowing bakers to save time and streamline kitchen operations.
Highly perishable compared to dry and frozen yeast, requiring careful handling and strict temperature control to ensure optimal performance and avoid wastage.

How Can You Use fresh yeast?

Because fresh yeast has a shorter shelf life and is best used within a week when stored in the refrigerator, it’s the ideal choice for frequent baking or preparing large batches, such as during the holidays. This is why fresh yeast is also known as a "special occasion yeast."

To use it in a recipe that calls for dry yeast, double the amount. Then, crumble it and let it soften and dissolve in whatever liquid the recipe calls for (warm the liquid to just lukewarm) before adding it to your dry ingredients. Always soften or dissolve fresh yeast in liquids before mixing to ensure even distribution throughout the dough.
